Ms. Xiu Ling Li, proprietress of Bamboo Hat Garden Restaurant, is a member of a Hakka family that has resided in the Beipu district of Hsinchu County for three generations. Apart from retaining the traditional Hakka flavor, this Garlic Pepper Duck dish also has an additional health-giving appeal. The recipe for the dish improves upon the myth of Hakka food dishes being strong flavored. The ingredients for this dish include carefully selected high-quality duck and spices, such as several kinds of natural pepper, and garlic. Furthermore, the recipe follows the ancient method of first curing the meat for eight hours, and then steaming over a strong fire for about 3 hours. This enables the meat to retain its fresh taste and tenderness, and causes a spicy aroma to emanate from the kitchen during cooking. In addition, the cooked duck is packaged in aluminum foil to retain the freshness of the pepper duck, thereby presenting a rich delicacy with multiple layers of flavor.
